Much Yum!

~ November 22, 2007 at 9:38 by Capnkirk (Views: 0 )

I bought a 6-pack of McEwan's Scotch Ale last night. Damn, that stuff is tasty, and they're like potato chips...I ended up drinking 3 of them and promptly fell asleep on the couch.

A Tasty Brew

~ November 14, 2007 at 14:47 by Capnkirk (Views: 0 )

New Belgium Brewing Company recently released their winter warmer - 2 Degrees Below. Mighty tasty, and quite hoppy, but the cool part is that the hops are underneath the malts, which makes drinking it quite interesting. Goos stuff!

Yeastie Beastie

Hey homebrewers!
It's winter time and the temperature is cold. I keep all my fermenters out-of-the-way in the basement, where the ambient temperature is 55-60 all winter long. My yeast of choice for these conditions is the San Francisco Lager Yeast from White Labs, it seems to ferment well up to 7% alcohol and keeps a lot of hop bitterness and flavor in the finished beer. The trouble is it takes 5-6 weeks to ferment five gallons, which means I have to go without beer for 1-2 weeks between finished batches.
My question is, what do y'all do this time of year, to avoid this tragic problem of having to *gasp* buy beer to tide yourself over? Or am I doomed to sit and watch the bubbling airlock and dream of quenching my parched throat?

Homebrew?

~ November 6, 2007 at 19:24 by babyshoes (Views: 0 )

Do y'all still want homebrew recipes? This one's pretty much straight out of Papazian's Homebrewer's Companion, but it's a great stout recipe.

4 lb Pale Malt
4 lb Munich Malt
2 lb Wheat Malt
1 lb 120L Crystal Malt
1/2 lb Roasted Barley
1/2 lb Black Patent Malt
1 lb Quick Oats
2 oz hops -- I use the hops I grew at my old house, I think they're Willamette.
That's a good choice to use -- you don't want high-alpha hops here.
Boil these the full 60 minutes.
1 oz Crystal hops -- boil for the last 15 minutes.
2 tsp gypsum
1 pinch Irish Moss.
Yeast = White Labs San Francisco Lager Yeast.

The best thing about this recipe is that almost all of the grains are available as organically-grown. Now look, I think Joel's store is the best thing about Corvallis, but buy your rolled oats at the co-op -- they're much cheaper there and organic too.

New Brew @ The 'Pooia

Calapooia Brewing has brought out their new winter warmer - Kringle Krack Strong Ale. I had a couple/few the other night and I must say that the brew is mighty tasty.

Midas Touch Ale
"This recipe is the actual oldest-known fermented beverage in the world! The recipe showcases the known ingredients of barley, white Muscat grapes, honey & saffron found in the drinking vessels in King Midas' tomb! Somewhere between a beer, wine and mead, this smooth, dry ale will please with Chardonnay or I.P.A. drinker alike."

It used to be really hard to find and now Joel at Corvallis Brewing Supply has it. Go get some NOW!
